Ingredients
  

  • 8 8-9 - tomatillos, husked, rinsed, and roughly chopped
  • 1 - medium sweet onion, diced
  • 1 1-2 - fresh jalapeños, seeds removed for mild heat or keep them if you like it spicy!
  • 1 - clove of garlic, peeled
  • 1 - generous handful of fresh cilantro, stems included
  • 4 4-6 - oz ripe pineapple, cored and cut into chunks for a delightful contrast
  • 2 - tablespoons of fresh lime juice
  • 1 - teaspoon salt use more to taste if needed
  • 1 - teaspoon honey to balance the acidity
  • - A pinch of ground cumin for extra depth

Method
 

Step 1: Prepare the Tomatillos
  1. Start by placing your tomatillos into the food processor. You want to pulse them just a few times. This step helps break them down without pureeing them completely yet. You're aiming for a chunky texture that gives your salsa personality!
Step 2: Add the Other Ingredients
  1. Next, throw in the diced onion, jalapeños, garlic, and cilantro into the processor. Also, toss in your cubes of ripe pineapple. This will add a nice, sweet flourish to the salsa. Now, add the lime juice, salt, honey, and that great pinch of cumin. Pulse everything together until it reaches your desired consistency!
Step 3: Taste and Adjust
  1. This step is important! Once you’ve blended your salsa, taste it. Depending on your preference, you might want to add a little more salt or lime juice. Adjust based on your tastebuds.
Step 4: Chill Before Serving
  1. Once you're happy with the flavor, transfer your salsa to a serving bowl and let it chill in the refrigerator for at least half an hour. This waiting period allows the flavors to meld beautifully. It's worth the wait!
