  • 8 slices bread: thick-cut artisan bread
  • Mayonnaise: for spreading
  • 12 oz Gruyere cheese, thinly sliced or grated, at room temperature
  • 6 oz White cheddar cheese, thinly sliced or grated, at room temperature
  • 4 slices Muenster cheese, at room temperature
  • 2 yellow onions, diced
  • 1 tsp fresh thyme, minced
  • 2 tsp fresh rosemary, minced divided
  • 1 tsp brown sugar
  • Salt and pepper: to taste
  • 3 Tbsp butter divided
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 cup fresh spinach

Method
 

Step 1: Sauté the Onions
  1. In a skillet, combine 1 ½ tablespoons of butter with the olive oil over medium-low heat. Once the butter has melted, toss in the diced onions, a pinch of salt, pepper, minced thyme, and one teaspoon of fresh rosemary. Sauté, stirring frequently, until the onions soften and start to brown, roughly 10 minutes. This step is crucial, as the caramelization brings out the onions' natural sweetness.
Step 2: Add the Brown Sugar
  1. Next, stir the brown sugar into the onions and cook for an additional minute. This step amplifies that sweet flavor, balancing the savory notes from the herbs. Once done, transfer the onions to a plate and set them aside.
Step 3: Prepare the Bread
  1. Spread a thin layer of mayonnaise on one side of two slices of bread. The mayo will create a rich, golden crust when grilled.
Step 4: Melt the Remaining Butter
  1. In the same skillet, add the remaining butter and the last teaspoon of rosemary. Heat over medium heat, swirling to coat the bottom of the skillet with the melted butter. This infuses more flavor into your grilled cheese.
Step 5: Grill the Bread
