  • 12 - large eggs, hard-boiled and peeled
  • 1 - cup mayonnaise
  • 1 - ½ teaspoons rice vinegar
  • - ¾ teaspoon ground mustard powder
  • - ½ teaspoon granulated sugar
  • 2 - jalapeños, seeded and finely diced
  • 6 - slices of bacon, cooked to a crisp and crumbled
  • 1 - teaspoon smoked paprika, for an added punch
  • 1 - tablespoon fresh chives, finely chopped
  • Feel free to play around with the ingredients! The chives bring a nice freshness to the dish, while smoked paprika adds depth in flavor.

Method
 

Step 1: Prepare the Eggs
  1. Start by hard-boiling your eggs. For perfectly cooked hard-boiled eggs, place them in a pot, cover with water, and bring to a boil. Once boiling, turn off the heat, cover, and let sit for about 10-12 minutes. Once done, cool them in ice water to make peeling easier. After peeling, slice the eggs in half lengthwise.
Step 2: Extract the Yolks
  1. Carefully remove the yolks from the egg whites and place them in a mixing bowl. Make sure to keep the whites intact for filling!
Step 3: Mash the Egg Yolks
  1. Using a fork, mash the yolks until they are uniform in texture. This will serve as the base for your creamy filling.
Step 4: Mix in the Goodness
  1. Add the mayonnaise, rice vinegar, ground mustard powder, and sugar into the mashed yolks. Stir until everything is well blended and creamy.
Step 5: Incorporate Jalapeños and Bacon
  1. Next, fold in the diced jalapeños and crumbled bacon. Be generous; those flavors should shine through.
Step 6: Prepare for Filling
  1. To make filling the egg whites easier, transfer the yolk mixture into a Ziploc bag. Simply snip off a small corner of the bag for a makeshift piping bag.
Step 7: Fill the Egg Whites
  1. Carefully squeeze the bag and fill each egg white half with the yolk mixture. Aim for a nice, rounded top—no one likes a flat deviled egg, right?
Step 8: Garnish and Chill
  1. Sprinkle the tops with smoked paprika for that beautiful finish and extra flavor. Pop them in the fridge to chill for at least 30 minutes before serving. This will help the flavors meld beautifully.
