Step 1: Prepare the Chicken
- Begin by rinsing the chicken under cold water. In a large pot, combine the ginger, scallions, pandan leaves, salt, and chicken. Fill the pot with enough water to cover the chicken. Bring to a gentle simmer over medium heat. Once simmering, cover the pot and reduce heat. Cook for about 30-40 minutes, or until the chicken is cooked through and tender.
Step 2: Make the Rice
- As the chicken cooks, prepare the rice. In a separate pot, heat vegetable oil over medium heat. Add the minced ginger and garlic, sautéing until fragrant. Add the rinsed rice and turmeric, stirring to coat the grains. Pour in the chicken broth from the cooking chicken pot (about 4 cups), and bring it to a boil. Once boiling, cover the pot and reduce heat to low. Cook for about 15-20 minutes, or until the rice is fluffy and cooked through.
Step 3: Prepare the Bok Choy
- While the chicken and rice are cooking, we can work on the bok choy. Heat vegetable oil in a large skillet over medium heat. Add the sliced shallots, cooking until they turn translucent and fragrant. Add the halved bok choy and soy sauce, sautéing for 3-4 minutes or until just tender.
Step 4: Assemble the Dish
- Once the chicken is cooked, remove it from the pot and let it cool slightly. Strain and reserve the broth if you wish to use it for soup later. Slice the chicken into pieces. Serve the chicken on a plate with a generous helping of rice alongside it. Place bok choy and cucumber slices on the side. Garnish with fresh cilantro.

- Set out the chili garlic sauce and kecap manis for guests to add to their plates. This personal touch allows everyone to customize their meal.
