Ingredients
  

For the Chicken:
  • 1 small whole chicken, giblets removed
  • 3 piece -inch of ginger, peeled and thinly sliced
  • 3 medium scallions, trimmed and cut in half
  • 2 pandan leaves, tied into knots
  • 2 tablespoons kosher salt Diamond Crystal preferred
  • 1/8 teaspoon freshly cracked white pepper
  • 2 tablespoons rice wine
  • 2 tablespoons soy sauce light or dark depending on preference
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon sugar
For the Rice:
  • 2 cups long-grain white rice, thoroughly rinsed
  • 1 tablespoon minced fresh ginger peeled
  • 1 tablespoon minced garlic
  • 1/2 teaspoon turmeric
For Bok Choy:
  • 8 ounces baby bok choy, washed, trimmed, and halved 6 small heads
  • 2 medium shallots, peeled and sliced into thin rings 1/16-inch
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon soy sauce
For Serving:
  • Chile garlic sauce to taste
  • Kecap manis
  • 1 small cucumber, thinly sliced 2 cups
  • 1 bunch fresh cilantro, chopped

Method
 

Step 1: Prepare the Chicken
  1. Begin by rinsing the chicken under cold water. In a large pot, combine the ginger, scallions, pandan leaves, salt, and chicken. Fill the pot with enough water to cover the chicken. Bring to a gentle simmer over medium heat. 
    Once simmering, cover the pot and reduce heat. Cook for about 30-40 minutes, or until the chicken is cooked through and tender.
Step 2: Make the Rice
  1. As the chicken cooks, prepare the rice. In a separate pot, heat vegetable oil over medium heat. Add the minced ginger and garlic, sautéing until fragrant. Add the rinsed rice and turmeric, stirring to coat the grains. 
    Pour in the chicken broth from the cooking chicken pot (about 4 cups), and bring it to a boil. Once boiling, cover the pot and reduce heat to low. Cook for about 15-20 minutes, or until the rice is fluffy and cooked through.
Step 3: Prepare the Bok Choy
  1. While the chicken and rice are cooking, we can work on the bok choy. Heat vegetable oil in a large skillet over medium heat. Add the sliced shallots, cooking until they turn translucent and fragrant. Add the halved bok choy and soy sauce, sautéing for 3-4 minutes or until just tender.
Step 4: Assemble the Dish
  1. Once the chicken is cooked, remove it from the pot and let it cool slightly. Strain and reserve the broth if you wish to use it for soup later. Slice the chicken into pieces.
    Serve the chicken on a plate with a generous helping of rice alongside it. Place bok choy and cucumber slices on the side. Garnish with fresh cilantro.
Step 5: Serve with Sauces
  1. Set out the chili garlic sauce and kecap manis for guests to add to their plates. This personal touch allows everyone to customize their meal.

  • Use a Good Quality Chicken: A fresh, organic chicken will yield the best flavor and texture.
  • Adjust Cooking Time for Size: If your chicken is larger or smaller than a standard small chicken, adjust the cooking time accordingly.
