Ingredients
  

  • 2 tablespoons extra virgin olive oil or rendered turkey fat or lard
  • 1 small yellow onion, roughly chopped
  • 1/2 tablespoon freshly minced garlic
  • 1 medium orange, quartered
  • 1 pound cooked turkey meat about 3 cups—preferably dark meat or a mix of dark and white
  • 1 quart low-sodium chicken broth 32 oz carton – or turkey stock
  • 1 cube herbed chicken bouillon
  • 1 whole cinnamon stick
  • 3 dried bay leaves
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin

Method
 

Step 1: Sauté The Aromatics
  1. In a large pot, heat the olive oil (or rendered turkey fat) over medium heat. Add the chopped onion and sauté until it turns translucent, about 5 minutes. Stir in the minced garlic, cooking until fragrant, around 1-2 minutes. This is where the base of flavor begins.
Step 2: Add Citrus and Turkey
  1. Next, toss in the quartered orange and cooked turkey meat. Stir everything together, allowing the turkey to soak up the flavors while the orange infuses its zest. Cook for about 3-5 minutes.
Step 3: Pour in the Broth
  1. Now it's time to add the chicken broth along with the bouillon cube. Stir well until the cube is completely dissolved. Don’t forget to toss in the cinnamon stick and bay leaves.
Step 4: Season & Simmer
  1. Sprinkle in the sea salt, black pepper, smoked paprika, and ground cumin. These spices are the heroes of this dish, giving it life and making those dreary leftovers shine. Bring everything to a boil, then reduce the heat to low and cover.
