Step 1: Prepare Your Ingredients
- Start by gathering all your ingredients. It’s easier this way and will keep the process smooth. Chop the carrots into 2-inch pieces, quarter the onions, and mince the garlic.
Step 2: Season the Roast
- Generously rub the Pikes Peak seasoning all over the roast. Don’t hold back! Want that flavor to penetrate? Get your hands in there.
Step 3: Sear the Roast (Optional)
- For added depth, consider searing the roast in a hot skillet for about 4-5 minutes on each side until it browns. This is optional but definitely can elevate your dish.
Step 4: Load the Slow Cooker
- Now, place the roast into your slow cooker. Surround it with the chopped carrots, quartered onions, and minced garlic. Then, pour the can of chopped tomatoes over the top. This is where the magic starts to happen.
Step 5: Add Seasoning and Liquid
- Next, sprinkle salt and ground black pepper over everything. If desired, you can add a splash of beef broth for extra moisture, but it’s not necessary. The roast will weep flavor as it cooks.
Step 6: Cook on Low
- Cover the slow cooker and set it to cook on low for about 8 hours. If you're strapped for time, cooking it on high for 4-5 hours works too, but I'm a fan of the slow method.
Step 7: Thicken the Gravy
- Once cooked, remove the roast and vegetables from the slow cooker, and place them on a serving platter. To make a thick gravy, mix the cornstarch in a small bowl with a little cold water, then add it to the cooking liquid in the slow cooker. Turn it on high for 10-15 minutes until it thickens.
Step 8: Serve and Enjoy
- Slice the roast against the grain, and serve with the amazing gravy drizzled over the top. Don’t forget to add those tender veggies.
