Method
Step 1: Cook the Pasta
- Start by bringing a pot of salted water to a boil. Once boiling, add the pasta and follow the package instructions for the perfect al dente texture. Drain and set aside, reserving a little pasta water for later.
Step 2: Sauté the Aromatics
- In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the diced onion. Sauté until translucent, then add the minced garlic. Keep an eye on it—burnt garlic is not a welcomed guest here!
Step 3: Add Vodka and Tomatoes
- Pour in the vodka. Let it simmer for about 2-3 minutes, allowing the alcohol to cook off while infusing flavors. Next, stir in the crushed tomatoes. Mix well, and let it simmer on low heat for about 10 minutes. The sauce will thicken beautifully.
Step 4: Incorporate the Cream
- After the sauce has simmered, it’s time to add the heavy cream. Stir until everything blends together seamlessly. Season with salt, pepper, and chili flakes. If it feels a bit thick, you can add a bit of reserved pasta water to loosen it up.
Step 5: Combine Pasta and Sauce
- Add the cooked pasta right into the skillet. Toss until every inch of the noodles is coated with the luscious sauce. If needed, adjust the seasoning again.
Step 6: Finish with Cheese and Basil
- Before serving, stir in the grated Parmigiano-Reggiano. The warmth of the pasta will melt the cheese, creating an irresistible richness. Top with fresh basil for a pop of color and freshness.
Notes
- Choose High-Quality Ingredients: Fresh tomatoes and good cheese elevate the dish. Don’t skimp on quality; it makes a noticeable difference.
- Timing is Key: The vodka should simmer long enough to reduce, but not so long that the dish loses its depth.
- Don’t Overcook the Pasta: Aim for al dente. Overcooked pasta will turn mushy when mixed with the sauce.
- Use Fresh Herbs: Dried herbs are good in a pinch, but fresh basil or parsley can really brighten up the flavor.
- Save Some Pasta Water: It’s a secret chef trick! The starchy pasta water helps thicken your sauce and bind it to the noodles.
