Ingredients
  

Lamb:
  • 2 lbs lamb, cut into bite-sized cubes 1 kg
  • 2 tablespoons olive oil
  • 2 large garlic cloves, peeled and thinly sliced
  • 10 whole garlic cloves, skin-on optional
  • 1 medium onion, finely chopped or 2 tablespoons dried onion flakes
  • 2 sprigs fresh rosemary or ½ teaspoon dried rosemary
  • 2 sprigs fresh thyme or ½ teaspoon dried thyme
  • 1/2 teaspoon salt, to taste
  • 1/2 teaspoon freshly ground black pepper, to taste
Liquid Marinade:
  • 1 cup vegetable, chicken, or beef broth or stock 250 ml
  • 2 tablespoons ketchup or tomato paste
  • 1 tablespoon Dijon mustard or grainy mustard
  • 1 tablespoon soy sauce for color, optional
  • 2 tablespoons brown sugar or honey for a touch of sweetness
  • 1 tablespoon smoked or sweet paprika for a mild smoky flavor
  • 3 large bay leaves
Slurry:
  • 1 tablespoon cornstarch for thickening
  • 1/4 cup cold water 60 ml
Additional Flavor Enhancements:
  • 1 teaspoon ground cumin for a warm, earthy undertone
  • 1 tablespoon balsamic vinegar for added depth of flavor

Method
 

Step 1: Prepare the Lamb
  1. Begin by cutting your lamb into bite-sized cubes. Use a sharp knife for clean cuts. This not only helps with cooking but ensures a pleasant eating experience as well. If the lamb has excess fat, trim it down a bit, but keep some fat on. It adds flavor.
Step 2: Sear the Meat
  1. Heat the olive oil in a large skillet over medium-high heat. Add the lamb cubes in batches, ensuring not to overcrowd the pan. Brown on all sides, about 3-4 minutes per batch. This step builds a rich, complex flavor.
Step 3: Add Aromatics
