Slow Cooker Lemon Chicken Recipe

Slow Cooker Lemon Chicken Recipe - Easy Family Meal

When it comes to pairing with slow cooker lemon chicken, the options are limitless. Whether you're looking to complement the zesty flavors of the chicken or to balance out its richness, a few standout options spring to mind. I personally love serving lemon chicken alongside fluffy jasmine rice. The delicate grains soak up the vibrant sauce, making each bite feel like a mini celebration.
Another great choice is a light, vibrant salad. Think crisp mixed greens with a lemon vinaigrette; the citrus will elevate the whole meal.
For a more substantial side dish, consider roasted vegetables tossed in olive oil and herbs. The earthy tones of root vegetables like carrots or sweet potatoes create a wonderful contrast with lemon chicken. Don't forget about crusty bread, either! Perfect for mopping up any leftover sauce.

Ingredients

  • 6 tablespoons unsalted butter, divided
  • 5 boneless, skinless chicken breasts
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 teaspoon dried Italian herbs
  • 2 lemons, juiced and zested
  • 2 cloves of garlic, minced
  • 1 cup half-and-half
  • 1 tablespoon cornstarch
  • 1 tablespoon chicken bouillon base optional, but adds great flavor!
  • 1/2 teaspoon dried thyme for an aromatic touch
  • 1 tablespoon Dijon mustard for a tangy kick

Method

Step 1: Prepare the Chicken
  1. Start by preparing your chicken breasts. Rinse them under cold water and pat them dry with paper towels. This helps the seasoning stick better. Next, rub the kosher salt and black pepper all over the chicken. This simple step sets the foundation for great flavor.
Step 2: Sauté the Garlic
  1. In a skillet over medium heat, melt 2 tablespoons of butter. Once it’s melted and sizzling, add the minced garlic. Sauté this for about 30 seconds until fragrant. You’re aiming for lightly golden, not burnt. This step intensifies the garlic flavor and adds depth to your dish.
Step 3: Combine the Ingredients
  1. Now, it’s time for your slow cooker. Place the seasoned chicken breasts in the bottom. Pour the sautéed garlic and its butter over the chicken. Next, add the lemon juice and zest, Italian herbs, dried thyme, and Dijon mustard. Add the cup of half-and-half to create a creamy sauce. If you're using chicken bouillon, mix that in as well.
Step 4: Cook Low and Slow
  1. Cover your slow cooker. Set it on low for about 6-8 hours or high for about 3-4 hours. I personally recommend the low setting. The longer cooking time ensures maximum tenderness. You’ll know it’s ready when the chicken easily pulls apart with a fork.
Step 5: Thicken the Sauce
  1. Once the chicken is cooked, you might find the sauce a tad thin for your liking. To thicken it, mix the cornstarch with a splash of cold water and pour it into the slow cooker. Stir everything well. Let it cook on high for an additional 30 minutes. This step gives the sauce a velvety, satisfying texture.
Step 6: Serve and Enjoy
  1. After thickening, carefully remove the chicken from the slow cooker. I like to shred mine and serve it back in the pot with the sauce. Alternatively, serve the chicken whole alongside rice or your favorite side. Don’t forget to drizzle some of that luscious sauce over the chicken. Trust me; it’s a game-changer!

Notes

  • Use Fresh Lemons: Fresh juice and zest enhance the flavor more than bottled versions.
  • Don’t Skip the Searing: Searing the garlic beforehand helps create a deeper flavor profile.
  • Plan Ahead: The beauty of a slow cooker recipe is that you can prepare it in the morning and come home to a delicious meal.
  • Adjust Seasoning: Taste the sauce before serving. If it needs more zing, add a splash more lemon juice or a pinch of salt.
  • Experiment with Herbs: Feel free to add other herbs like rosemary or parsley for a different flavor dimension.
