Ingredients
  

  • 5 garlic cloves, peeled and minced
  • 1 large shallot, finely chopped
  • 1 tsp sea salt
  • 1/2 cup fresh cilantro, chopped
  • 4 fresh jalapeño peppers, sliced
  • 4 pounds ripe tomatoes
  • 1/2 tsp smoked paprika
  • 1 tbsp lime juice

Method
 

Step 1: Prep Your Ingredients
  1. Start by chopping the tomatoes, slicing the jalapeños, and finely dicing the garlic and shallots. Gather all your ingredients, and trust me, the more organized you are, the smoother the process.
Step 2: Combine in the Slow Cooker
  1. In your slow cooker, combine the chopped tomatoes, garlic, shallots, jalapeños, cilantro, and spices. Add the sea salt, smoked paprika, and lime juice. Mix it all together gently. Get those hands a bit dirty!
Step 3: Set the Cooker
  1. Now that all ingredients are in the pot, set your slow cooker to low heat. Allow it to cook for about 6 to 8 hours. This allows the flavors to meld beautifully.
Step 4: The Wait
  1. While you wait, take a moment to savor the anticipation. Perhaps, pour yourself a little snack—maybe some chips and store-bought salsa? That way you’ll be ready when it’s time!
Step 5: Blend if Desired
  1. After 6 to 8 hours, if you like a smoother consistency, transfer the salsa to a blender and pulse it to your desired texture. If you prefer it chunky, simply stir it well and you’re done.
