Ingredients

  • 4 Tbsp. vegetable oil
  • 2 1/2 lbs. round steaks, or bottom or top round roast, sliced into thick pieces anywhere from 2 to 4 pounds works well in this dish
  • 1/2 cup all-purpose flour
  • 1 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 10 1/2 oz. beef consomme from Campbell's, or alternative beef broth
  • 29 oz. petite diced tomatoes, undrained two 14.5 oz. cans
  • 2 Tbsp. soy sauce
  • 1 cup chopped onion
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp. smoked paprika
  • 1 cup sliced mushrooms

Method

Step 1: Prepare the Meat
  1. Start by seasoning the flour with salt and pepper. Dredge each piece of steak in the flour until well coated. This step enhances both the flavor and the texture of the meat as it cooks.
Step 2: Sear the Steak
  1. In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, add the floured steak pieces. Sear them until they're nicely browned on both sides, about 3-4 minutes each. Not only does this create a beautiful crust, but it also locks in the flavors.
Step 3: Load Up the Slow Cooker
  1. Now, layer the cooked steak into your slow cooker. Give it a moment to settle. Next, add the chopped onions, diced bell peppers, and sliced mushrooms atop the steak. These vegetables will not only add flavor but also moisture as they cook down.
Step 4: Create the Sauce
  1. In a separate bowl, mix together the beef consomme, diced tomatoes (with their juices), soy sauce, minced garlic, and smoked paprika. Stir well to combine. Pour this mixture over the beef and vegetables in the slow cooker. Make sure everything is well-coated.
Step 5: Cook Low and Slow
  1. Set your slow cooker to low heat and cook for about 7 to 8 hours. If you’re in a rush, you can set it to high for about 3-4 hours. The goal here is to allow the meat to become tender and for the flavors to meld beautifully.

Notes

  • Use Quality Meat: Go for the best round steak you can find; good meat means great flavor.
  • Don’t Rush the Browning: Searing the steak is essential. Don't skip this step! A good sear locks in moisture.
  • Customize the Veggies: Feel free to swap or add any vegetables you prefer. Carrots and celery are great additions.
  • Experiment with Seasoning: The beauty of this dish is its flexibility. Add herbs like thyme or rosemary for even more flavor.
  • Adjust Consistency: If your sauce is too thick, add a bit of water or broth toward the end of cooking.
