Ingredients
  

  • 3/4 cup firmly packed light brown sugar
  • 2 tablespoons soy sauce or tamari for a gluten-free option
  • 1 cup canned pineapple juice feel free to choose fresh if you have it!
  • 3 tablespoons tomato ketchup
  • 11/2 tablespoons 11/2 cornstarch mixed with 2 tablespoons cold water this creates the slurry
  • 1/3 cup rice vinegar you can find this in the Asian aisle; apple cider vinegar is a great substitute
  • Optional: 2–3 drops natural red food coloring
  • 1 teaspoon freshly grated ginger adds that extra zing!

Method
 

Step 1: Gather Your Ingredients
  1. Start by making sure all ingredients are measured out and within reach. This keeps the cooking process smooth and enjoyable.
Step 2: Combine the Base Ingredients
  1. In a medium saucepan over medium heat, combine brown sugar, soy sauce or tamari, pineapple juice, and ketchup. Stir gently to dissolve the sugar and blend all the ingredients.
Step 3: Add the Vinegar
  1. Once the mix has dissolved nicely, add the rice vinegar. This adds that lovely tang that sweet and sour sauce is famous for. Bring the mixture to a gentle simmer.
Step 4: Thicken the Sauce
  1. In a separate bowl, mix the cornstarch and cold water until smooth. Take your saucepan off the heat briefly before stirring in this mixture. Return the pot to the heat, stirring constantly until the sauce thickens, which usually takes about 1-2 minutes.
Step 5: Add Additional Flavors
  1. If you’re using ginger or food coloring, add it at this point, stirring well to combine. Taste your sauce. Adjust the sweetness or acidity according to your preference. If you want more heat, a pinch of chili flakes can do wonders.
Step 6: Cool and Store
  1. Once the sauce is thickened and you’re satisfied with the flavor, remove it from the heat and let it cool. Transfer it to a glass jar or an airtight container. It can be stored in the fridge for up to two weeks.
