Yorkshire Pudding Recipe - Easy Family Meal

If you've never tried making Yorkshire pudding, you’re in for a treat. This dish is a symbol of comfort food in the UK. It’s light, airy, and utterly delicious. 
Plus, it’s a great recipe to impress family and friends. Why is it so great, you ask? Well, after a couple of years trying different variations, I’ve crafted a version that ticks all the boxes: easy to make, beautifully rises, and full of flavor.

Ingredients
  

  • 100 ml beef drippings or any preferred fat like lard, shortening, or vegetable oil
  • 4 large eggs
  • 150 g all-purpose flour
  • 175 g whole milk
  • 2 g kosher salt
  • 25 g water
  • 1 tsp Dijon mustard
  • 1 tbsp fresh thyme

Method
 

Step 1: Preheat the Oven
  1. First things first, preheating is crucial. I usually set my oven to a roaring 220°C (428°F). This helps achieve that glorious rise! 
    Ensure you’re using a muffin tin or a Yorkshire pudding tray, and put it in the oven while it heats up.
Step 2: Mix the Batter
  1. In a large bowl, whisk together your eggs until they’re frothy. The fun part is watching them bubble! Gradually add the milk, whisking continuously. It’s satisfying to see the mixture gain a creamy consistency. Then, sift in the flour and salt.
    Take note: sifting makes a world of difference in preventing lumps. Add the Dijon mustard and fresh thyme; fold them in gently until everything is just combined. Feel free to take a moment and appreciate how lovely it looks.
Step 3: Preheat the Fat
  1. Once the oven is ready, take out the muffin tin (carefully!). Pour your beef drippings into each compartment – about a tablespoon each. Pop it back in the oven for about 5 minutes. 
    What you want is sizzling fat. This step is vital for creating that irresistible crispy outer layer.
Step 4: Fill the Tin
  1. Carefully remove the tin from the oven, and quickly but carefully pour your batter into the hot fat. The batter should sizzle upon contact. This sound makes my heart sing! Aim for about 3/4 full to give it room to rise.
Step 5: Bake to Golden Perfection
  1. Return the tin to the oven and bake for about 20-25 minutes. Don’t you dare open the oven door during the first 20 minutes! You want them to rise without interference. When they're puffed and golden brown, they’re ready.

Notes

  • Beef Drippings: This adds a depth of flavor. If you don’t have any, substitute with lard or vegetable oil.
  • Eggs: They provide richness and structure. Fresh eggs yield the best results.
  • All-Purpose Flour: It’s key for giving the pudding its body. Use a good quality flour for optimal results.
  • Whole Milk: The creaminess of whole milk enhances texture. Skim milk works in a pinch but won't be as rich.
  • Kosher Salt: It’s essential for flavor enhancement. Adjust based on your preference.
  • Dijon Mustard: This unique touch introduces a hint of tang that transforms the dish.
  • Fresh Thyme: Thyme adds an aromatic earthiness. Feel free to swap for other herbs like rosemary for a unique twist.
